One of our favorite recipes to make with Light & Fit low-carb tortillas is “better for you” Mexican pizza. This recipe can be modified to omit the refried beans if they do not fit your lifestyle.
Mexican Pizza Recipe
Ingredients:
- Light & Fit Low Carb Flour Tortillas (2 for each Mexican pizza)
- Ground Beef
- Taco Seasoning
- Refried Beans
- Enchilada Sauce
- Shredded Mexican Cheese
- Diced Tomatoes
- Sliced Green Onion
- Sliced Black Olives
- Vegetable Oil
Directions:
- In a large skillet, brown and crumble ground beef. Drain excess grease.
- Add taco seasoning and water (as directed on the packet) to cooked ground beef. Simmer until thickened.

In another large skillet, heat oil over medium heat. Add tortillas, one at a time, cooking for 3-4 minutes and flipping frequently, until nice and crisp. Set aside.

On each tortilla, spread a layer of refried beans, followed by a layer of cooked ground beef.

Place another cooked tortilla on top of the ground beef. Spread 2 tablespoons of enchilada sauce on top. Add shredded cheese on top of the sauce.

Place the pizzas on a large nonstick baking sheet and bake for 8-10 minutes, until the cheese is melted.
- Top with diced tomatoes, black olives and green onion. Enjoy!
